If you are one of those who replace a blown sky in Photoshop consider taking a few sky shots at your holiday destination at say mid morning and mid afternoon whenever you travel away from home. This is particularly relevant if you are at a significantly different latitude to home.
The higher the latitude the darker the sky so if you insert a sky from the tropics into a European sky the sky will not match colour and lighting of the European photo and will still be too light. Conversely a high latitude sky into a tropical photo will look dark and artificial.
I now have built up a library of different skies I can use.
